All three lists compare your trailing 30 days of sales to the 30 days before that for every item Toast has ever recorded, refreshed daily.
Prior 30d Qty is the units sold in that earlier 30-day window (days 31-60 back). Recent 30d Qty is the units sold in the most recent 30 days. Growth compares the two.
Winners — sold at least 5 units in the prior 30 days, and volume is up 25% or more since.
Decliners — same baseline, but volume is down 25% or more.
Slow Movers — hasn’t sold in 21+ days (about 3 operating weeks), or sold 2 units or fewer in the trailing 30 days. Items new to the menu in the last 14 days are excluded so they aren’t flagged before they’ve had a chance.
Days Since Sale is exactly what it sounds like — how many days it’s been since that item last sold at all. The higher the number, the longer it’s been sitting untouched.
Cost Paid and Sell Price come from MarketMan’s recipe costing, not a live invoice feed — Cost Paid reflects MarketMan’s calculated ingredient cost for that item, Sell Price is the current menu price.
Margin is how much of the sale price is profit after ingredient cost (green 20%+, gold under 20%, red negative). A dash means MarketMan doesn’t have a recipe cost set up for that item yet. Note: a few items show unusually large negative margins that are very likely MarketMan recipe-setup errors (wrong unit or quantity), not real losses — worth a second look before acting on any single item’s number.
Green numbers mean volume is up over the prior 30 days. Red means it’s down.

Items with less than 5 units in the prior period don’t get a growth % at all (shown as a dash) — not enough baseline to call it a trend either way.
